15 Minute Shrimp and Asparagus Stir fry

As a working mom I am always looking for quick and easy recipes to make for my family. Naturally they would need to be healthy as well.  This one is especially easy and delicious.  Enjoy!

SHRIMP AND ASPARAGUS STIR FRY:

INGREDIENTS:

  • 4 tablespoons olive oil, divided
  • 450g large raw shrimp, peeled & deveined
  • 450g asparagus, ends trimmed and each stalk cut into 2-3″ pieces
  • 1/2 teaspoon salt, divided
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic (you could use the combo of garlic and ginger paste)
Lemon Sauce
  • 2/3 cup chicken stock
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. In a small bowl, whisk together all of the lemon sauce ingredients and set aside.
  2. In a large frying pan, heat 2 tablespoons olive oil over medium-high heat. Add shrimp to pan in a single layer and cook for about 3 minutes, turning them over to cook both sides. Season shrimp with 1/4 teaspoon salt. Shrimp should be beginning to pink on both sides and be opaque, but just slightly undercooked. Remove from frying pan and place shrimp on a plate.
  3. In same frying pan, heat another 2 tablespoons of oil over medium-high heat. Add asparagus and cook until asparagus is tender-crisp, bright green, and just barely beginning to brown. Season asparagus with 1/4 teaspoon salt (or more if needed). Add ginger and garlic and stir to combine with asparagus. Cook for another 30-45 seconds or so.
  4. Pour in lemon sauce mixture into frying pan with asparagus. Add shrimp back into pan and combine sauce with asparagus and shrimp. Simmer for about a minute or until sauce is thickened. Remove from heat and serve.

Things that make me happy..

It been a rough few months, I have changed jobs twice, my husband has been working crazy hours and the cold is making me incredibly grumpy.. In these moments it’s when I think about the things that make me happy… things like;

– Sunshine, sunshine and more sunshine!
– Tea
– Cosy blankets and cuddling on a Sunday afternoon
– Chocolates
– Sleeping late

Some days I just need reminding of the little things to keep me going.

Milestones and Multitasking…

It’s no secret that my greatest passion in life is being a mom and a wife, i love taking care of my family, cooking cleaning the works. Call me old-fashioned but its true.

It does get really tricky sometimes, trying to juggle everything. I feel like i am missing so many important milestones. The realization struck me yesterday when my daughter came home with her very first loose tooth… SHOCK HORROR – my baby is no longer a baby and is in fact well on her way to growing up.  The clock is officially ticking! How much time with her am I missing because I am busy? How much time do i miss out because I am preoccupied with other things – cooking, bills, my phone?  I know many say only woman can multi task but who said we should? Who decided that this was a good idea?

I read an interesting article the other day that explains why multitasking is actually ineffective, what happens when we do various things at the same time we are actually 25% less productive.. How this translates in my life is that if I am cooking and checking my phone while spending time with my 5yr old, I am not doing any of those things really well and does it really count? My goal is to try to focus on one thing at a time, to remain present in all that i, to savour each moment and appreciate all the little things.
